Tommie Sjef Wild Ales uses wooden barrels to ferment and age the beers in. This is the perfect environment for the wild yeasts and lactic acid bacteria to produce the eccentric aroma's and flavors that are characteristic for the style. It can remind of a farmhouse cider or a natural wine: slightly sour, fruity, wild, complex and dry.
At this moment we have one barrel room where the beers will ferment and age in oak for several months to several years. They can be blended with others beers to create a complex and balanced end result. Fruit or other ingredients can be added, or if a single barrel of beer is perfect on its own, it can be bottled straight out of the barrel as a single barrel release.
All ingredients used in our beers are only from organic farming and are sourced locally as much as possible.
